Yellow Squash and White Bean Chili

- 1 lb ground lean pork
- 1 quart chicken broth
- 1⁄2 cup dry white wine
- 2⁄3 cup dried great northern beans
- 2⁄3 cup dried garbanzo beans
- 1 cup chopped onion
- 1 cup yellow bell pepper
- 1 cup thinly sliced leek
- 1 cup cubed summer squash
- 1 cup red potatoes
- 2 teaspoons minced garlic
- 2 teaspoons jalapeno chili
- 2 teaspoons cumin seeds
- 1 teaspoon dried oregano
- 1 teaspoon chili powder
- 1⁄2 teaspoon ground coriander
- 1⁄2 teaspoon cinnamon
- 1 bay leaf
- salt and pepper
- 1 small tomatoes, finely diced
- 2 green onions, finely sliced
- 3 tablespoons finely chopped fresh cilantro
directions
- Cook pork in lightly greased skillet until browned, about 8 minutes, crumbling with a fork.
- Combine pork and remaining ingredients (chicken broth through bay leaf) in a slow cooker.
- Cover and cook on low for 7-8 hours or until the beans are tender.
- Season to taste with salt and pepper. Discard bay leaf.
- Sprinkle each bowl with tomato, green onions and cilantro.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there. Even the dog knows the command get outta my kitchen! LOL. Cooking for other people and trying new recipes or foods is FUN!
