- 1 (8 7/8 ounce) package ready-to-serve cooked spanish rice (such as Uncle Ben's)
- 1 (15 ounce) can black beans, rinsed and drained
- 1⁄4 cup salsa
directions
- Cook rice according to package directions.
- Combine, rice, beans, and salsa in a 1 1/2 quart microwave-safe casserole; toss well.
- Cover with lid; microwave at HIGH 1 1/2 minutes or until hot.

First I need to say that I used this recipe as an inspiration in that I made Spanish rice from scratch as I seldom ever buy processed packaged mixes. The result was a really delicious rice and beans. I just topped it with some low fat cheese and green onions and folded it into a tortilla. Super YUM!

Oh my goodness this is so good! :) I used the store brand spanish rice (it was uncooked) and cooked it until it was almost done, then followed the directions for there. I did add some cheese in for an additional 2 points for the whole dish! Served with salsa chicken! Thanks for posting! We loved this and will eat it often on our WW diet! {Made for PRMR tag February 2010]!

<p>? Hi! My name is Teresa.? My husband and I like to take RV trips but it seems lately we just us it for vintage motorcross races. I enjoy hiking, snowshoeing, have done some rock climbing but age is creeping up on my poor old bones. Anything to do with the outdoors I enjoy, so why do I live in rainy Washington state? We have 2 wonderful children, both grown. My son lives in LA and my daughter and her husband recently moved back in the area with their little boy...our grandson... who just turned?5 years old. We have a granddaughter who lives close by...she just turned 23 this year. She's a sweetheart.? Life is good when you have a son and a?daughter and they?gift?you with a granddaughter and grandson. :)??</p>
