Winters Mac and Cheese

If your like my family, warm and comfy foods are on the menu during the long cold winter nights. The men in my life love a little spice, so here is a way to amp up plain old mac and cheese.

ingredients
- 4 cups elbow macaroni
- 1⁄2 cup white cheddar cheese
- 1⁄2 cup jalapeno cheese
- 1⁄2 cup mild cheddar cheese
- 1⁄4 cup milk and cream
- 1 teaspoon hot pepper flakes, oregano, salt and pepper
directions
- Preheat oven to 350.
- Boil the mac and cheese to almost tender. In a separate sauce pan warm the milk and cream and the spices. Once warm, add the cheeses a bit at a time till smooth and cooked through. If to thick ad a touch more milk to the right consistency.
- Add the macaroni to the cheese mixture and coat thoroughly.
- Grease a glass baking dish with olive oil, then add the mixture to the dish. Top with a thin layer of cheese and bake.
- Bake at 350 for 25 minutes.
- Note: For a bit of extra spice sprinkle the top with crushed red pepper flakes along with the cheese.
