DIRECTIONS

  • boil and mash as normal.
  • I prefer to cook them separately and then mix together in a large bowl.
  • Add butter and seasonings and nutmeg to taste.
  • Spread fairly thinly on an ovenproof dish.
  • Score deeply with a fork making a nice pattern (a crown pattern is nice).
  • Drizzle some olive oil and a little more nutmeg.
  • Grill until golden and crispy.
  • Is really good with Chicken passata. Any root vegetable can really be used including pumpkin, squash etc
