ingredients
- 1 cup butter or 1 cup regular margarine
- 1 cup sugar
- 1 cup sifted confectioner's sugar
- 2 eggs
- 1 cup cooking oil
- 1 teaspoon vanilla
- 4 cups sifted flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1⁄2 teaspoon salt
directions
- Cream together butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in oil and vanilla.
- Sift together flour, baking soda, cream of tartar, and salt. Gradually add dry ingredients to creamed mixture; mix well. Chill dough in refrigerator 8 hours or overnight.
- Shape dough in balls the size of a walnut. Place balls about 2 inches apart on ungreased baking sheets.
- Bake in 350 degree oven 10 to 12 minutes or until done. Remove from baking sheets; cool on racks. Makes about 7 dozen.

These were a big hit today! I used 1/2 cup of oil and 1/2 cup of applesauce, then split the dough in 3 parts and coloured them for spring. At that point I read the bit about chilling the dough *duh*. I was on a time restraint as I was taking them to my boys' school as a treat for last day before spring break and only chilled the dough for maybe 90 minutes. They still turned out perfect, just ever so slightly harder to handle the dough before hand. I made them slightly smaller too and ended up with 125 cookies! A lovely, light and not too sweet cookie that was enjoyed by all and even the teacher sent home a thank you note. Thanks for another keeper PaulO! Made and enjoyed for PAC Spring 2011 :)
