ingredients
- 2 ounces whole wheat penne
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon olive oil
- 1 cup frozen broccoli
- 3 Italian tomatoes, diced
- 1⁄4 cup part-skim ricotta cheese
- 1⁄4 teaspoon salt
- 1 tablespoon parmesan cheese, grated
- 1⁄2 teaspoon crushed red pepper flakes
- 1⁄2 teaspoon italian seasoning
directions
- saute onions in olive oil over medium heat.
- add garlic, salt, pepper flakes, and italian seasoning when onions turn translucent.
- add tomatoes and frozen broccoli, cook until tomatoes are softened.
- meanwhile boil pasta water and cook penne until al dente.
- transfer pasta to sauce pan with vegetables and add ricotta.
- gently toss to combine and finish with parmesean.
