- 1⁄2 cup light margarine
- 1⁄4 cup Splenda sugar substitute
- 1 teaspoon vanilla
- 3⁄4 cup whole wheat flour
- 1⁄8 teaspoon baking powder
- 1⁄2 cup semi-sweet chocolate chips
directions
- Mix margarine, Splenda and vanilla.
- Add in flour & baking powder.
- Add in chocolate chips.
- Separate into 12 balls and flatten slightly.
- Bake at 300°F for 10 minutes.

I've made these cookies several times now for a friend who cannot have eggs. I even enjoy one myself occasionally. I made 4 dozen today. The first double batch I used the mini chocolate chips and the second double batch, I used regular chocolate mint chips. For the light margarine, I used light becel which I use all the time. On behalf of my friend who is able to eat these cookies with no problem, I will give these 5 stars. Thank-you for sharing the recipe.Reply

Our DD is diabetic so these will be 'her' cookies, after I try one :-) I did not have light margarine so I used butter. Used mini chocolate chips. These rolled into balls easily without sticking to your hands. Baked for 11 minutes. They came out very light and flaky. I don't know if that had anything to do to the fact that I used butter or not. Will make again, thank you for posting. I made these for the Spring PAC 2007 game.Reply
