Whole Lotta Nuts Granola

Couldn't tell you where I got this recipe, but it's a nice crunchy and nutty granola. Perfect for breakfast or snack.

ingredients
- 3 cups rolled oats
- 1⁄2 cup coconut
- 1⁄2 cup slivered almonds
- 1⁄4 cup pumpkin seeds
- 1⁄4 cup sunflower seeds
- 1⁄2 cup crushed pecans or 1/2 cup walnuts
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon salt
- 4 tablespoons butter
- 1⁄3 cup honey
- 1⁄2 teaspoon vanilla
- 1⁄2 cup raisins or 1/2 cup dates
- 1⁄2 cup dried cranberries
directions
- Preheat oven to 325 degrees.
- Stir oats through salt together.
- In pan, melt butter with honey.
- Add vanilla, pour into bowl.
- Toss with oats and spread on baking sheet.
- Bake, stirring every 5 minutes for 20 minutes.
- Cool.
- Stir in fruit.
- Store in airtight bag.

This is a really good recipe for homemade granola. It would be great to use on top of yogurt, or to eat as a cereal with milk, but I just eat it by itself as a healthy snack. I used every single nut and fruit called for and wouldn't change a thing, except maybe add a little brown sugar to the butter/honey mixture. FYI, this recipe is NOT the "cluster type" granola. Thanks for posting this recipe! Made for My 3 Chefs, 2009. *Update 2/24/10* I have made this several times now and I have tweaked it a bit for personal taste. I add a couple of tablespoons of brown sugar to the honey/butter mixture and I use 1 cup of pecans instead of 1/2 (I LOVE pecans!). I have found that I love this mixed with a bowl of Frosted Flakes in milk (I know, it's not as healthy that way). I use about 1/2 granola and 1/2 Frosted Flakes. It makes a wonderful late night snack or breakfast.Reply
