ingredients
- 1 cup whole wheat flour
- 1⁄2 cup soy flour
- 1⁄4 cup flax seed meal
- 3 tablespoons vegetable oil
- 1 egg
- 1 cup sugar (I used Splenda mix)
- 1⁄2 cup milk
- 1⁄2 cup crushed nuts
- 1 cup finely diced apple
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
directions
- Mix dry ingredients together.
- Then combine milk, oil, and egg. Add dry ingredients to wet ones and stir. Mixture will be thick. Fold in nuts and apples.
- Fill 12 well-greased muffin tins 2/3 full. Bake at 350 degrees 17-20 minutes.
