"these are a muffin recipe I got from the back of Bob's Red Mill Apple Cinnamon and Grains Cereal. I changed it up a little to make it with less sugar and more protein"

directions

  • mix dry ingredients.
  • Mix wet ingredients in seperate bowl.
  • Add to dry ingredients.
  • Stir quickly until dry ingredients are just moist. Batter will be thick.
  • Fill muffin cups 2/3 full.
  • Bake for 15 minutes at 400 degrees.
  • makes aprox 36 muffins.

I am a mother of 4 kids...ages 3-12....they are all picky eaters so they keep me on my toes. I have a wonderful husband, Eric, hence the name, who is diabetic so I will tend to post things that are ok for diabetic eaters! I am also a full-time college student studying health education with an emphasis on Dietetics.
