White Bean, Spinach and Sausage Soup

- 1 tablespoon olive oil
- 1⁄2 - 1 lb smoked sausage, sliced
- 1 medium onion, chopped
- 2 cloves garlic, chopped
- 1 lb spinach leaves, coarsely chopped
- 2 cans chicken broth
- 1 1⁄4 cups picante sauce
- 2 cans small white beans, drained
directions
- Heat oil in dutch oven over medium heat.
- Add sausage, onions, and garlic.
- Cook until sausage is browned.
- Add spinach and cook 2 minutes longer.
- Add broth, picante sauce, and beans.
- Heat to boil to bring flavors together.

This is a great recipe! I made it for our weekly Friday night bonfire party, and we all loved it. It was quick and easy, and that's a must when I cook. I doubled the recipe for our crowd, and was very lax with measuring and being specific and it turned out wonderful anyway. I used 2 boxes of frozen chopped spinach in place of the fresh spinach leaves (to save money and time) and since it was as well received as it was, I'd have to say that was a good substitution. And with the beans and spinach, a pretty healthy soup as well. I will positively be making this again. Thanks for the recipe!!

Really satisfying on a cold night. I did make a couple of alterations - I used turkey sausage and added much more chicken broth than called for. I also forgot to buy picante sauce, so I used a tablespoon of hotsauce and a tablespoon of tomato paste to give it a little kick and a little color. All in all, it was exactly what I was looking for tonight, and I'm going to add it to my repertoire.

<P>I'm a Mom of three boys: 19, 16, 13 (Josh, Jake and Jonah) and a 1 yr old golden retriever-Jethro. I work full-time as a Medicare compliance analyst for a non-profit health insurer. I love to cook - although I don't always have enough time to do as I'd like to do. I don't especially care to do the clean up though- but who does?? Food in general brings people together and makes people feel at ease. My boys love to help out in the kitchen-especially if I'm baking bread or baking sweet treats for them. If anyone were to ask them what I put in a recipe - first two ingredients they'd list would be olive oil and garlic -- (well not for the sweet stuff..at least)! I'm constantly browsing to see how I can alter/influence my family's eating - as well as trying to get it on the table quickly! My boys are all hockey players - so I spend a lot of time at the ice arena. When I have time of my own..I try to get on the golf course or read cookbooks.</P>
