Weight Watchers 2 Point Brownies- Awesome! (Ww)

"I came up with this after reading a ton of reviews of WW brownies and trying a bunch of recipes that are not really low point or not really good...its very HG inspired. Don't be scared of the pumpkin, its nutritious, adds moisture and makes the brownie very dense. I ran it through recipe builder using the Betty Crocker low-fat brownie mix. Another mix may alter the points."

  • 1 (20 ounce) box low-fat brownie mix (18 servings)
  • 1 (8 ounce) package fat free cream cheese (softened)
  • 1 (15 ounce) can pumpkin
  • 4 ounces applesauce (I used one of the little individual cups)
  • 1 12 cups Fiber One cereal (ground to a powder)
  • 2 tablespoons Splenda granular
  • 4 tablespoons cocoa (I used Hershey's Special Dark)
  • 1 teaspoon baking powder

directions

  • Grind fiber one to a powder in food processor.
  • Mix fiber one, brownie mix, baking powder, cocoa and splenda thoroughly until combined.
  • Blend in pumpkin, softened cream cheese, and applesauce.
  • Mix very well until consistent color/texture is reached.
  • Spoon into 22 muffin tins. If you only get 21, according to Recipe Builder they go up to 3 points so make sure to get 22 ;).
  • Bake at 350 for 18 minutes.
