Warm Spiced Peaches

  • 1 tablespoon butter
  • 3 tablespoons Splenda brown sugar blend
  • 1 tablespoon lemon juice
  • 1 tablespoon water or 1 tablespoon peach juice
  • 14 teaspoon cinnamon
  • 14 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 6 peaches, peeled and sliced
  • 14 cup almonds, toasted

  • Melt butter in non-stick frying pan, over low heat.
  • Add brown sugar splenda, lemon juice, water and peach juice (I squeezed the juice from the skins and little bits I was discarding, right into the frying pan).
  • Add cinnamon and nutmeg and bring to a low simmer.
  • Add vanilla extract.
  • Gently stir in the sliced peaches and warm them through.
  • Serve with vanilla ice cream and top with toasted almonds.
