Warm Spiced Peaches

ingredients
- 1 tablespoon butter
- 3 tablespoons Splenda brown sugar blend
- 1 tablespoon lemon juice
- 1 tablespoon water or 1 tablespoon peach juice
- 1⁄4 teaspoon cinnamon
- 1⁄4 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 6 peaches, peeled and sliced
- 1⁄4 cup almonds, toasted
directions
- Melt butter in non-stick frying pan, over low heat.
- Add brown sugar splenda, lemon juice, water and peach juice (I squeezed the juice from the skins and little bits I was discarding, right into the frying pan).
- Add cinnamon and nutmeg and bring to a low simmer.
- Add vanilla extract.
- Gently stir in the sliced peaches and warm them through.
- Serve with vanilla ice cream and top with toasted almonds.
