Walnut-Crusted Salmon

  • On a plate, thoroughly combine walnuts and breadcrumbs; set aside. In a small bowl, combine jam and vinegar.
  • Season salmon with salt and pepper and brush both side with jam and vinegar mixture. Press walnut mixture evenly into both sides of salmon, finishing off the top sides with any excess mixture, pressing it in so it will hold.
  • Place salmon on a rimmed baking sheet; bake at 400F for about 15 minutes, or until salmon flakes easily with a fork.
  • TIP: When buying salmon, ask the fishmonger to skin it for you.

  1. This was a different take on salmon. We like the taste of apricot with salmon, and the vinegar gave a nice tang to the dish. The bread crumb and walnut topping added a good texture - but the crumbs remain crumbly and loose because nothing binds them to the nuts. I might try spraying lightly with butter-flavroed spray to hold it together and add a bit of crispiness. But I will definitely make this again!

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
