Waldorf Salad, Georgia Style

- 5 medium Red Delicious apples, unpeeled
- 1 lemon, juice of
- 1⁄2 cup sliced celery
- 1⁄2 cup chopped pecans
- 1⁄2 cup raisins
- 1⁄3 - 1⁄2 cup mayonnaise
- 1⁄4 cup peach preserves
- lettuce leaf (optional)
directions
- Chop apples into 1/2 inch cubes, and sprinkle the lemon juice over all.
- Combine apples with celery, pecans and raisins in a serving dish.
- Combine mayonnaise and peach preserves in smaller container and pour over apple mixture. Stir.
- Refrigerate.
- Serve on lettuce leaves, if desired.

This is a really excellent Waldorf Salad!!! Great balanced flavors and love that it has lemon juice to keep the apples fresh and from turning brown. I love the use of peach preserves mixed with the mayonnaise!!! Super delicious!! I used recipe#47554 that I had made a couple of weeks ago so it really had a great flavor! Also, used recipe#334118 so my pecans were roasted and extra good and crisp!! I prefer pecans over walnuts so this is my favorite Waldorf Salad now, thanks Deb G!
