- 2 onions, chopped
- 1 green pepper, chopped
- 1 red pepper, chopped
- 2 garlic cloves
- 10 ounces mushrooms, sliced
- 2 carrots, diced
- 1 (14 ounce) can chopped tomatoes (or use fresh)
- 2 tablespoons tomato paste
- 1 teaspoon cayenne pepper (to taste)
- 1 teaspoon turmeric
- 1 tablespoon thyme
- 1 lb brown rice
- 4 cups vegetarian broth
- 1 cup frozen green pea
- cilantro (optional) or parsley (to garnish) (optional)
directions
- Make broth if using bouillion. (Bring 4 cups of water to a boil. Add bouillon and stir).
- Simmer the onions, peppers, garlic and mushrooms in 1/2 cup of the broth to soften.
- Stir in the carrots, tomatoes, spices, rice and remaining broth; bring to a boil and simmer 45 minutes, or until the rice is tender.
- Just before serving, adjust the seasonings if needed, stir in the green peas and garnish with cilantro or parsley.
