Vegetable Rice

- 1 tablespoon olive oil
- 1⁄2 cup onion, chopped
- 1 -2 garlic clove, minced
- 1 cup carrot, chopped
- 1⁄4 teaspoon pepper
- salt, to taste
- 1 cup long-grain rice
- 2 cups vegetable stock
- 1 sweet red pepper, chopped
- 2 green onions, thinly sliced
directions
- Heat oil over medium heat; Saute onion, garlic and carrots, until softened.
- Season with salt and pepper.
- Add rice; cook, stirring, for 1 minute.
- Add in stock and red pepper; bring to boil. Reduce heat to low; cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. (Depends on which rice you use)
- Remove from heat. Stir in green onions; cover and let sit for 5 minutes.

This is A VERY FLAVORFUL RICE DISH, & so easy to prepare, too! I used 2 large cloves of garlic, then seasoned with lemon pepper instead of the usual S&P, but other than that the recipe was followed, although I did use a homemade vegetable stock!
