  • Heat oil over medium heat; Saute onion, garlic and carrots, until softened.
  • Season with salt and pepper.
  • Add rice; cook, stirring, for 1 minute.
  • Add in stock and red pepper; bring to boil. Reduce heat to low; cover and simmer for 15-20 minutes or until rice is tender and liquid is absorbed. (Depends on which rice you use)
  • Remove from heat. Stir in green onions; cover and let sit for 5 minutes.

  1. This is A VERY FLAVORFUL RICE DISH, & so easy to prepare, too! I used 2 large cloves of garlic, then seasoned with lemon pepper instead of the usual S&P, but other than that the recipe was followed, although I did use a homemade vegetable stock!
