Vegan Raw Chocolate Cherry "ice Cream"

"I got this recipe off of a website, and it is AMAZING. I am not a vegan or a raw foodie, just looking for healthy alternatives. I use my Vitamix to make this, but you could probably use any blender or food processor. You can also add chocolate chips for texture."

  • Peel and chop the banana, then freeze solid. Process all ingredients in a blender or food processor until combined into a smooth consistency, similar to soft-serve ice cream. Either enjoy right away or allow to set in freezer until firm.

  2. Yumm! I used the Evans cherries from our tree which are a sour cherry and it was delicious. I omitted the agave sweetener and it was definitely sweet enough without it, even with the more sour cherries. And it is so quick and easy, especially if you have a high speed blender.
     
  3. Made for PAC Spring 2012. This is absolutely delicious....the texture is unbelievably like ice cream, but it uses no dairy! I used natural peanut butter, honey, and cocoa powder, and frozen pie cherries. I will definitely make this again, but never again will try in a blender until I am adding milk to turn it into a smoothie. This recipe is definitely most suitable for a food processor.
