ingredients
- 1 cup diced potato
- 1⁄3 cup chopped onion
- 1⁄4 cup diced carrot
- 3⁄4 cup boiled water
- 1⁄2 cup raw cashews
- 1⁄4 coconut milk
- 2 tablespoons nutritional yeast flakes
- 1⁄2 teaspoon garlic powder
- 1 tablespoon lemon juice
- 1 3⁄4 teaspoons sea salt
- 1 dash paprika
- 1 dash cayenne pepper (optional)
directions
- In a small pot bring several cups of water to a boil.
- Add potatoes, carrots, and onions to boil for 10 minutes or until tender.
- Place boiled ingredients into a blender with 3/4 cup of boiled water (preferably same water as just used).
- Add all other ingredients and blend until smooth.
- Enjoy with chips or place in pasta to make macaroni & cheese!
