ingredients
- 1⁄2 cup vegetable oil
- 1⁄3 cup chopped onion
- 5 garlic cloves, minced
- 1⁄2 cup all-purpose flour
- 4 teaspoons nutritional yeast
- 4 tablespoons soy sauce or 4 tablespoons tamari
- 2 cups vegetable broth
- 1⁄2 teaspoon dried sage
- 1⁄2 teaspoon salt
- 1⁄4 teaspoon black pepper
directions
- Heat oil in a medium saucepan over medium heat. Saute onion and garlic until soft and translucent, about 5 minutes.
- Stir in flour, nutritional yeast, and soy sauce to form a smooth paste. Gradually whisk in the broth. Season with sage, salt and pepper. Bring to a boil.
- Reduce heat and simmer, stirring constantly, for 8-10 minutes, or until thickened.

Hubby and I were impressed with this great tasting gravy on our left over mashed potatoes! I changed the serving size to 4 and sauted 1 cup of chopped button mushrooms with olive oil added and a splash of white wine before adding the rest of the ingredients. I also added about 1/2 cup of water in the end as we wanted a thinner gravy but it didn't compromise the flavor at all. It was so good, we wanted seconds but ran out of potatoes so will keep the rest of the gravy for another meal this week. Thanks Emily for this great recipe, it's printed and is a keeper!

Yum, loved it! I used white wine which probably wasn't as nice as red in this - but still fantastic. I used slightly more nutritional yeast, but otherwise as written. My only change to this recipe would be that I don't think it serves 10! Could just be me, a huge vegan gravy lover, but I'd say more like 4 - it's so good you just want more & more.

I'm a 24 year old who works in the Chicago theater community. I have a little bit of a food obsession and love to plan meals, cook for myself, cook for my girlfriend, and cook for large groups of people.
My friends and I have a weekly "Food Club" where I make them food and they bring me booze. It's pretty much awesome- I get to cook and eat AND get free beer. It changes weekly depending what's cooking, but we have Grill Club, Chili Club, Taco Club, Soup Club- you get the idea.
