Can I prepare the batter the night before? Can I freeze the batter? This is a winner. Though we need lower sodium. Toddler fighting a kidney problem called nephrotic syndrome with an egg and dairy allergy. I make them small as they aren't as easy to 'flip' as regular pancakes.

I didn't have any applesauce. This recipe tasted better than traditional pancake mix. Used it in waffle maker and delicious.
