Vegan Chocolate-Chocolate Chip Cake (And Gluten-Free!)

I have no idea where I found this recipe, but I've adapted it to be gluten-free. I serve it to people without allergies all the time, and they never guess that it is either GF or vegan. Great for those with dairy or egg allergies, or who keep kosher and need a pareve recipe. I've included both the GF and regular version in the ingredients.

ingredients
- 1 cup applesauce
- 1⁄2 cup brown sugar
- 1 teaspoon vanilla
- 3⁄4 cup flour (or gluten-free flour mix. I prefer Bob's Red Mill)
- 1⁄2 teaspoon xanthan gum (omit if not using GF flour, or if your GF flour mix already has xantham gum included)
- 1⁄3 cup cocoa
- 2 teaspoons baking powder
- 1⁄2 teaspoon baking soda
- 1⁄2 teaspoon salt
- 1 dash cinnamon
- 1⁄2 cup chocolate chips
directions
- Preheat oven to 350 degrees.
- Grease an 8x8in square pan.
- Combine applesauce, brown sugar and vanilla in a small bowl.
- In a separate bowl, combine all dry ingredient (except the chocolate chips).
- Add the applesauce mixture into the dry ingredients and mix until thoroughly combined.
- Add in chocolate chips.
- Pour into prepared pan.
- Bake 25-30 minutes, or until a toothpick comes out clean.
