CAKE
- 3 cups flour
- 2 cups sugar
- 6 tablespoons cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 cups water
- 3⁄4 cup vegetable oil
- 2 tablespoons vinegar
- 2 teaspoons vanilla

FROSTING
- 1⁄2 cup sugar
- 1⁄4 cup cocoa powder
- 1⁄4 cup soymilk
- 2 tablespoons margarine
- 1 tablespoon vegetable oil
- 1⁄2 - 1 cup powdered sugar
- 1 dash salt
- 1⁄2 teaspoon vanilla
directions
- Mix cake ingredients and bake at 350 degrees for 40 minutes.
- FROSTING: Mix sugar and cocoa powder in saucepan.
- Stir in soy milk, oil, salt, and margarine.
- Heat to boiling and let boil for 3 minutes, stirring occasionally.
- Let cool, then add vanilla and powdered sugar until desired consistency is achieved.

This is the best CAKE recipe, period. The fact that it is vegan and I can eat it is just a bonus. I make this recipe in cupcake form for people to share at bake sales and for people in my office and they can't beleive how good it is. People who aren't really fans of cake have told me that they love this one. It is moist and rich, but not too sweet or overpowering. It's just great!

I need to say one thing about this recipe. It is true it is Vegan, but in actuality this cake recipe is 100's of years old. It was passed down in my family(and I'm sure many others) as a type of German cake we all called 'Wacky Cake'. It is a surperb recipe. It's so good and easy you really can't mess it up. I don't even need frosting with mine. For an extra kick and flavor add 2-3tsp of grated orange peeling!
