- 2 2⁄3 cups all-purpose flour
- 1⁄2 cup margarine
- 1 cup water
- 1 1⁄2 teaspoons baking soda
- 2⁄3 cup buttermilk
- 2 cups sugar
- 1⁄2 cup vegetable oil
- 2 eggs
- 1 1⁄2 teaspoons vanilla

Cream Cheese Frosting
- 1⁄2 cup margarine
- 1 (8 ounce) package cream cheese, softened
- 1 1⁄2 cups coconut (optional)
- 1 1⁄2 teaspoons vanilla
- 1 (1 lb) box powdered sugar
- 1⁄2 cup chopped pecans (optional)
directions
- Mix flour and sugar together in bowl, Bring to boil, margarine, oil and water, pour over flour and sugar mixture.
- Beat well.
- Then add eggs, baking soda, vanilla and buttermilk, mix well.
- Pour into greased and floured 15x10 jelly roll pan.
- Bake in a preheated oven at 350 degrees for 15-20 minutes or until cake tests done with toothpick.
- Remove from oven while still warm frost with cream cheese frosting.
- Cream together margarine, cream cheese, the add vanilla, coconut, nuts and powdered sugar.
- Mix well, spread warm cake.

I made this cake exactly as listed, baked it for the full length (20 minutes), it was cooked through, but still quite wet. Maybe that is how it was supposed to be, I am trying to remember if my chocolate sheet cake is that wet. I thought is was a good cake, but wanting a bit more flavor. Maybe next time I might experiment a bit and add some coconut extract to the cake and toast the nuts and coconut before putting in the frosting. Most likely, I will be making this cake again! You are right, it was a nice change to the old chocolate texas sheet cake! Thank you.
