- 2 tablespoons Splenda sugar substitute
- 1 tablespoon cornstarch
- 1⁄8 teaspoon salt
- 5⁄8 cup milk
- 1 egg yolk
- 1⁄2 tablespoon butter
- 1⁄4 teaspoon vanilla
directions
- Combine Splenda, cornstarch and salt in a microwave safe bowl. Whisk in milk, egg yolk, butter and vanilla.
- Cook on 50% power for two minutes, stirring after one minute. Cook at full power for one minute, stirring every 15 seconds or until desired consistency is reached.

So easy and delicious! We made tart shells with pretzels, filled with this pudding, and topped it off with sliced strawberries. (Made enough to fill 5 3” shells.) It starts to thicken quickly after about 30 seconds on the second round of cooking. I cooked it for only 45 seconds on this second round, and it turned out perfectly. Also subbed regular sugar. I’ll definitely be making this again for a quick treat!Reply
