ingredients
- 1 cup low fat cottage cheese
- 1 cup nonfat yogurt or 1 cup low-fat yogurt
- 1⁄3 cup pure maple syrup
- 1⁄2 teaspoon pure vanilla extract
directions
- Whirl all of the ingredients in a blender until smooth.
- Serve chilled.

Update July 2011:<br/>Ive now made this again blending the cottage cheese thoroughly and serving it over some berry compote. It looked absolutely company worthy and had the same awesome taste. Its a keeper for sure!<br/><br/>Original review May 2009:<br/>This is absolutely wonderful! The taste is incredibly yummy with the vanilla adding a really nice touch to the cottage cheese and it also comes together so quickly and easily. I used this as a topping for crumbled cake bits and microwaved the whole mixture for 2 minutes. It was so good!<br/>I dont have a blender and I dont mind the chunks from the cottage cheese, so I simply stirred everything together, but when making this for guests, Id use a hand-held blender for getting a more sauce-like texture.<br/>Thanks so much for sharing this gorgeous recipe with us, Sharon! This was delicious. I just left the food processor running while I did something else for a bit and it came out quite smooth if not "silky". I used it on a dessert of hot cooked apples and it was really wonderful and would compliment so very many things. I can see myself keeping this on hand nonstop in the summer for fresh berries, fruit salad dressing and etc. DH put some on his French Toast this morning in place of syrup and he loved it. Don't make more than you'll use in a day or two at the very most. While it was nice this morning it was better last night on the apples.

This is one of those recipes that deserves at least 10 stars. (Not something that I usually say either) When I picked this I thought that it would taste good, but it is better than I could have imagined. I used fat free cottage cheese, fat free/sugar free vanilla yogurt and Log Cabin's sugar free maple syrup. So essentially, I had a pretty healthy topping for cake and strawberries. The smell is heavenly and it tastes sooo good. I really enjoyed this and no one could tell that it was good for them. Thanks for posting this recipe. This is definitely a new "standard" recipe for me. I love this stuff and it's sooo easy too!
