VANILLA
- 1 cup sugar
- 2⁄3 cup cornstarch
- 1⁄2 teaspoon salt
- 2 cups milk
- 1 teaspoon vanilla

CHOCOLATE
- 1 1⁄2 cups sugar
- 2⁄3 cup cornstarch
- 1⁄2 teaspoon salt
- 3⁄4 cup cocoa
- 2 cups milk
- 1 teaspoon vanilla

BUTTERSCOTCH
- 2 cups packed brown sugar
- 2⁄3 cup cornstarch
- 1⁄2 teaspoon salt
- 2 cups milk
- 1 teaspoon vanilla
- 2 tablespoons butter
directions
- Vanilla: mix sugar,cornstarch and salt with 2 c milk cook over medium heat until it thickens and comes to a boil boil 1 minute remove from heat and stir in vanilla.
- Pour into a bowl and place wax paper on top,Chill.
- Chocolate: mix sugar,cornstarch,salt and cocoa with 2 c milk.
- cook same as vanilla pudding.
- Butterscotch: Mix brown sugar,cornstarch and salt with 2 c milk.
- Cook same as vanilla and chocolate but also adding the butter at the end.

Tried the chocolate variation tonight and I have to say my final product was NOT pudding..had more the consistency of a thick chocolate sauce. It was intensely chocolate but I can't help thinking the 1.5 cups of sugar made it more gooey than a cornstarch thickened pudding would normally be. I have a microwave recipe that uses 2c of milk but no where near the same amounts of cornstarch, cocoa or sugar as this one does. Such a disappointment, I can't give this more than 3 stars at this moment...maybe if the other two variations satisfy me enough I'll bump it up to 4.Reply

I tried the Butter Scotch recipe, it worked like a champ. My sister and I were talking about instant puddings this weekend. She is of the mind it is easier to buy it at the store. I mentioned you can make it at home and it taste better! This is now in my rotation. Good recipe, Thank you for posting it.Reply
