Tuscan Pork Chops (Or Chicken) With Rosemary

"I just love this sauce, and it is so easy to put together, too. Though I haven't tried it with chicken yet, I think it would be great with 4 chicken breast fillets substituted for the pork chops--simply increase the simmering time (in step number 6)."

  • In a small saucepan, cover the sun-dried tomato pieces with chicken broth and madeira; bring to a boil, remove from heat and allow to stand about 10 minutes to plump the tomatoes.
  • Heat the olive oil in a large non-stick skillet over medium-heat.
  • Add the pork chops and brown on both sides; remove from skillet and set aside.
  • Add shallots and garlic to the skillet and cook briefly (till they become fragrant).
  • Stir in tomatoes with the liquid and chopped rosemary.
  • Return the chops to the skillet, cover tightly and cook over low heat (just simmering) for 5 to 6 minutes (longer as needed for chicken breasts) until they are cooked through.
  • Remove the meat from the skillet to serving platter.
  • Combine water and cornstarch; add to the skillet.
  • Cook over medium heat, stirring constantly, until the sauce thickens.
  • Top the meat with the sauce and serve.

  1. This recipe was very easy to make. Other than using bone-in chops, I did not alter the recipe at all. The prep was minimal, which was good for a weeknight. We liked the sauce, but maybe not enough to make again. Thanks!
     
  2. 8/21/17 Followed this recipe to the letter...making it with chicken & it turned out perfect. However, it tasted terrible! There is nothing Tuscan about this recipe. The rosemary really ruins this recipe. My sister & I are pretty great in the the kitchen & we couldn't even think of a way to improve this recipe :(
     
  3. Good, but not great. I made it with bone in pork chops. It's very mild and the rosemary disappears (I used fresh ). This recipe is not quite the thing if you want something strongly savory.
     
  4. Tasty and tender pork chops. I felt that it needed something so I added several chopped kalamata olives.
     
  5. This was really good! My husband loved it...he said it tasted Tuscan before I even told him what is was called. I didn't have any wine on hand, so just used more chicken broth. I also used oil packed tomatoes blotted really well and dried rosemary. I stuck my sauce in a food chopper right before adding the cornstarch/water slurry. Great recipe!

I am an American married to a Belgian, and have lived in Belgium since December 1999. Cooking is my major hobby. I'm also an avid reader, but I have difficulty finding the time. I love to travel. I've seen at least parts of most regions of France, as well as parts of Germany, Austria, a great deal of Switzerland, Slovenia, Croatia, Luxembourg, and Monaco. I'm absolutely in love with the Bay of Naples and Sorrento coast areas of Italy, which my husband and I recently re-visited on a trip that included Rome, Puglia, Umbria and Marche. I'm still looking forward to Ireland, Spain, Portugal, the Czech Republic . . . the list is too long ! One of the bonuses of travel is getting to taste the local cuisine, and afterward trying to figure out how to duplicate it at home. I think cooking is one of the nicest things a person can do for someone they love (including themself!) I had to submit a picture with me and my cat, Sophie, as she insists on sitting in my lap when I'm sitting at the computer. If you are wondering what all that stuff hanging on the wall behind us in the photo is, it is just a small part of my husband's military medal collection. He was appalled by my posting this picture-- Our study is the messiest room in our house (thank god!)
