Tuscan Pizza With Basil Crème Fraiche

- 1 prepared pizza crust (Boboli or frozen)
- 1 cup cooked diced chicken
- 1⁄4 cup dried cranberries
- 1⁄4 cup green onion, finely chopped
- 3 tablespoons sun-dried tomatoes, drained
- 1 1⁄2 cups mozzarella cheese, shredded
- 1⁄2 cup red pepper, chopped
- 1 teaspoon rosemary
- 1 teaspoon italian seasoning
- 1⁄2 cup creme fraiche
- 2 tablespoons basil, finely chopped
- 1 tablespoon basil, for garnish, if desired
directions
- Follow the package instructions for the preparation of the crust.
- In a small bowl, add rosemary, Italian seasoning, and basil to the creme fraiche. Stir until combined.
- Using a large spoon, place mixture on prepared crust just as you would regular pizza sauce. Leave about 1/2" from all edges.
- Sprinkle diced chicken, green onions, red peppers and sun-dried tomatoes all over the sauce. Add cranberries to the top.
- Sprinkle shredded mozarella cheese over the top.
- Bake in a pre-heated 375F oven for 10-14 minutes (again use pizza crust's directions--the time depends on which crust you've purchased).
- Remove from oven when the bottom of the crust is golden and the cheese is melted.
- Slice, and garnish with additional chopped or torn basil, if desired.

This is amazing. This was made by using flat bread and making 2 individual pizzas. I'm not sure about the quantities and how it would work with a larger pizza because I used pretty much the quantity indicated for each ingredient except for the shredded cheese. If I were to make this as a larger pizza, I might increase some of the ingredients. This was a very creative use of contest ingredients and something I would not hesitate to make again.
