ingredients
- 1⁄4 cup caramel topping, plus
- 2 tablespoons caramel topping, divided
- 1 honey maid graham cracker pie crust
- 1⁄2 cup planters pecan pieces, plus
- 2 tablespoons planters pecan pieces
- 1 cup cold milk
- 2 (1 1/3 ounce) boxes Jello Instant Vanilla Pudding Mix
- 1 cup canned pumpkin
- 1 teaspoon ground cinnamon
- 1⁄2 teaspoon ground nutmeg
- 1 (8 ounce) container Cool Whip, divided
directions
- Pour 1/4 cup caramel topping into crust; sprinkle with 1/2 cup pecans.
- Beat milk, dry pudding, pumpkin and spices with whisk until blended.
- Stir in 11/2 cups whipped topping.
- Spread into crust.
- top with remaining whipped topping.
- refrigerate 1 hour.
- top with pecans and drizzle remaining caramel with fork.
- Store leftovers in refrigerator.

CORRECTION: I'm looking at the recipe from Kraft that you can pick up in the stores. It says you need 2 pkgs of the 4-serving size Jell-O Vanilla Flavor Instant Pudding & Pie Filling. This recipe calls for the 1 1/3 oz boxes, but my Kraft Foods says it should be the 2 of those 3.4 oz (96g) boxes. I made this at Thanksgiving and it went over wonderfully. Use the Jell-O brand, not a store brand, for optimum results.

I found this recipe in a magazine and searched Recipezaar to see if it had been posted. I was glad to see the recipe is here and glad that Nimz (the review posted b/f this one) decided there's an error in the recipe--there is. The recipe should call for 2 (3.4 ounce) boxes of Jello Pudding Mix--the large boxes not the small ones. All other ingredients look accurate.

I hate giving low reviews but this just didn't work for us. It never set up and stayed so soft that I couldn't served it. Applying the Cool Whip to the top of the pie didn't work either because it was just to soft and I couldn't spread it. The consistency was just way off for us. I think it would be a great pie but I think there might be something missing, and I will admit that pies are not my specialty. Is someone else makes this please z-mail and tell me if I did something wrong because I followed it to the letter. Made for PAC Fall 09 :(
