- Ready In:
- 1 chicken bouillon cube
- 1 cup hot water
- 2 cups cooked turkey
- 1 large turkey bone
- 2 large carrots, cut into 1/2 inch pieces
- 4 stalks celery, cut into 1/2 inch pieces
- 1 small onion, chopped
- 1 tomatoes, chopped
- 3 tablespoons flour
- 1⁄2 cup uncooked white rice
- 1⁄2 cup uncooked wild rice
- 2 teaspoons parsley
- 2 teaspoons oregano
- 4 cups water
- 1⁄2 teaspoon salt (more or less, to taste)
- 1⁄2 teaspoon pepper (more or less, to taste)
- Dissolve the bouillon in the hot water to make a broth; set aside.
- Place the turkey meat, turkey bone, all the vegetables, flour, both rices, spices and chicken broth in a large kettle or Dutch oven
- Add as much of the 4 cups water as you prefer for desired consistency. Season with salt and pepper.
- Simmer over low heat for 30 to 45 minutes, or until the carrots and celery are tender and the turkey meat is heated through.
- Remove the turkey bone before serving stew.
- NOTE - you can easily use pasta in place of the rice. Just omit both the white and wild rices, and add about 1 cup uncooked egg noodles (or other pasta).
- TIP - I like to use a combination of white and dark meat when making this turkey stew, as I think it produces a much tastier stew. But you could easily use only white or only dark meat, to suit your taste buds.
- TIP - if you're watching your sodium intake, you can easily omit the chicken buillon cube in hot water and replace it with 1 cup of low-sodium canned chicken broth. For our health, we should consider this option but we are die-hard fans of this recipe and haven't been able to bring ourselves to do that -- at least not yet!

For a cold blustery day this was the perfect meal to make. I have it simmering stovetop right now and cannot wait for dinner. Used leftover turkey from Superbowl Sunday to make this stewe. It is below 0 with the windchill factor. I used to noodles as oppesed to the rice (DH not a fan). I did make my noodles seperate so I can add it in just before dinner to warm through. I used a combination of acini de pepe and ditalini noodles. Ialso used homemade broth left over from the turkey cooking to reduce as much salt as possible and added in an extra clove of garlic and NO salt seasoning. This is a keeper. Made for Soup-Fest 2011
I used this to make my first ever stew and I have made it so many times now I don't look at the recipe any more. Its so easily customizable too: I have added fresh green beans and kale when my garden has them, and left out the tomatoes when I don't want to buy any. I have thrown in a can of seasoned black beans as well (makes the broth tastier, as well as adding fiber). Its good with chicken too, I've used chicken more times than turkey. <br/><br/>I always make this in the crock pot, tossing everything in and cooking on low for 8-10 hours. My son gets really excited when he sees it cooking, he LOVES it.
I cut a 16 lb turkey carcass into 3 pieces to fit into a 4 qt pot (it barely fit) and made it with only long-grain white rice (had no wild rice). Added a 14.5 oz can of diced tomatoes but otherwise followed the recipe and it tasted great! Thanks for posting this, it's a terrific way to use leftover turkey. We'll definitely have this again.
12/1/2008 DH really enjoyed this. He doesn't like turkey but did say this is the best turkey leftovers he has ever had. I was shocked!! I loved it. I made as posted except used 2 cups of broth that was left over from roasting the turkey. (fat skimmed off) I think that helped add some spicy flavor. I did think that the oregano was a bit on the heavy side. I could really taste it. Next time I plan to decrease the amount in half. Thanks for posting. :) 12/2/2008 We had leftovers for lunch today and it was excellent. DH even requested it. That was a surprise!!!

This site used to be awesome. It was at the top of its game when it was called Recipezaar, but that was many years ago. The site was purchased by Scripps and belly-flopped into mediocrity. A few of the faithful members remained, hoping to wait out the storm of corporate nonsense. But alas, it never got better and just continued on its terminal path to nothingness. So most of the loyal members have vanished and made homes at better recipe sites.
