ingredients
- 2 cups penne pasta (whole grain)
- 1 teaspoon olive oil
- 1 sweet onion
- 2 tablespoons italian seasoning
- 1 teaspoon black pepper
- 29 ounces no-salt-added diced tomatoes
- 14 ounces turkey kielbasa
- 3 medium zucchini
- 2 green bell peppers
- 1 red bell pepper
- 1 teaspoon garlic powder
directions
- Cook pasta according to package, drain and set aside.
- Heat a large nonstick skillet over medium heat. Add olive oil.
- Add sausage and cook for 5 minutes or until browned stirring often.
- Add bell peppers, onions, and zucchini. Cook until slightly softened.
- Add Tomatoes and seasonings. Bring to a boil; reduce heat, and simmer 5 minutes.
- Top with cheese if desired.
