ingredients
- 1 (425 g) can tuna in brine
- 1⁄2 small red onion, finely chopped
- 1 small apple, peeled, cored, diced
- 1 tablespoon cranberries
- 1 tablespoon pecans, chopped
- 1⁄4 cup grapes, cut in half
- 3⁄4 cup mayonnaise
- salt and pepper
directions
- Mix all ingredients together.
- Enjoy!

I scaled this back to 1.5 serves and used red salmon as I am not a big fan of tuna, a red eschallot for the onion and as my red grapes were large I quartered them, left the skin on the apple and used dried cranberries and pecans and served on a bed of torn cos lettuce with a dollop of cottage cheese on the side. Thank you Hanka for a delicious lunch, made for Make My Recipe - New Year.

This is alright. I'm sure better with fresh cranberries, I used dried. I used a Clover Leaf tuna, walnut pieces instead of pecans as that is what I had on hand, red grapes, Hellman's olive oil mayonnaise to be soy free (not GMO free!), sea salt, freshly ground black pepper, plus the rest of the ingredients.
