  • Drain and flake the tuna.
  • Cook broccoli as directed on package, reserving 1/3 cup of the cooking liquid.
  • In a large saucepan, melt the butter over low heat. Add onion; cook until onion is tender. Blend in flour until smooth and bubbly.
  • Stir in seasoned salt, salt, pepper, and nutmeg.
  • Gradually add milk, stirring constantly. Stir in reserved cooking liquid.
  • Cook, stirring constantly, until sauce is smooth and thickened.
  • Stir in the flaked tuna, broccoli, and cheese.
  • Heat until cheese is melted.

    This is good, quick and easy soup! I don't care for onions so used green pepper instead. The broccoli and tuna paired well with the cheesy soup. This made a great inexpensive weeknight meal - thanks for posting the recipe!

    Ok, I did make some changes for our needs. I am allergic to fish, so I didn't add the tuna to the soup while cooking. Instead, I flaked it over the bowl for my DH. The broccoli was from a steamer bag, so it was really easy! I left out the salt, and used Lawry's seasoning because it has salt in it already. I also bumped up the pepper, but that is my preference. I also added some chopped scallions just because I really like onions and the color was pretty. So, I had a delicious Broccoli Cheese soup, and DH had a delicious Tuna Cheese Soup. He said it tasted much like a tuna melt. Made and Reviewed for Bevy Tag - Thanks! :)
