Tropical Oatmeal Cookies

ingredients

• 1⁄2 cup shortening
• 1⁄2 cup granulated sugar
• 1⁄2 cup brown sugar
• 1 egg
• 1 cup crushed pineapple, undrained
• 1 1⁄2 cups oatmeal
• 1 cup flour
• 1⁄2 teaspoon baking soda
• 1⁄2 teaspoon salt
• 1⁄2 teaspoon cinnamon
• 1⁄8 teaspoon nutmeg
• 1⁄2 cup chopped walnuts or 1/2 cup pecans

directions

1. Cream shortening and sugars together until fluffy.
2. Beat in egg and pineapple.
3. Blend in other ingredients.
4. Drop by heaping teaspoons onto ungreased cookie sheet.
5. Bake at 375 for 15 minutes.
