Tony Chachere's Basic Cream Sauce

ingredients
- 4 ounces margarine
- 2 teaspoons all-purpose flour
- 1 pint half-and-half cream
directions
- 1. Melt margarine in a saucepan over medium heat. Add flour, stir well and add cream (slowly) while stirring. Continue stirring until you get a thick sauce.
- 2. To this sauce you can add mushrooms, shrimp, crab meat, grated cheese, white wine, lemon juice, egg yolks or any combination of these.

My first time making a cream sauce and such a simple easy recipe. I prepared as directed. I was not sure how thick it was supposed to get, so it seemed to me that it took forever to thicken somewhat. I did add cheese to it and this did cause it to thicken quite a bit. I spooned it over grilled shrimp and broccoli, served on a baked potato. This was quite good and rich tasting. I am so glad to now know the basic cream sauce recipe. It has such versatility! Thanks bridgettels! Made in participation with My 3 Chefs 2012.
