- 8 slices tomatoes
- 2 tablespoons crumbled feta cheese
- 1 tablespoon balsamic vinegar
- 2 tablespoons minced fresh basil
- pepper
directions
- Arrange tomato slices on a serving plate.
- Sprinkle with feta cheese and drizzle with vinegar; sprinkle with basil and pepper.
- Tip: for a change of pace, try crumbled blue cheese or shredded mozzarella instead of feta.

Sheer simplicity which showcases the flavor of the tomatoes. I was very surprised (and excited) to see an oil free salad and curious about how the balsamic would work with the sharper flavor of the feta compared to more common pairings with a mild cheese such as mozzarella. indeed the sharpness married well and created a great contrast o the sweetness of the tomatoes and basil. In my case i used halved grape tomatoes because my regular tomatoes weren't quite ripe. Just delicious. Thanks!
