- 1⁄3 cup sliced onion
- 1 -2 tablespoon olive oil
- 2 leaves fresh basil, shredded
- salt & pepper

Can't believe I never rated this,but it is so good! I have made this several times, added fresh mozzerella in someof them. Good with the cheese, good without. Actually this is really all you need to eat with a good burger from the grill. I use this as the topping for my burger, and eat a bit more on the side. You must use really fresh tomatoes to get the best flavor, but so easy and tasty.
I made this with a mix of different varieties of tomatoes from the garden. We loved the simple flavor of the dish. Then I tried with fat free feta cheese-that was great, too. Next I tried with a splash of raspberry vinegar, then balsamic vinegar, then white balsamic. All were delicious, but the white balsamic turned this into a killer dish! Thanks for providing me with a fun day in the kitchen.
