  • Brown the rice to a light golden color with 2 T.
  • melted butter in a medium saucepan.
  • Add 3 cups water.
  • Bring to a boil.
  • Saute celery, pepper and onion in another pan with remaining butter for 6 minutes.
  • Add the tomatoes with juice.
  • Bring to a boil.
  • Pour into rice.
  • Add salt.
  • Simmer covered until rice is tender.
  • Add okra pods and simmer 15 minutes more.
  • Serve hot, sprinkle with parsley.

  3. I served this at a braii today. The fresha okra was just looking so good. I also sauted the rice and veggies together because I would only need to clean one pot. Everyone enjoyed it and I will definitely make it again. Thanks so much for sharing!
     
  4. This was quite good. I did use brown rice and cooked it longer before adding all the other ingredients. I also added a couple cloves of garlic too. Other than that, I followed the directions. It doesn't really need anything else in it. I'm sure I will have this again.
     
  5. Agree with Katie to saute rice and vegetables together. Added 1 clove of garlic. My family loved it.
