Tomato Cucumber Onion Salad

"We used to eat a similar salad at a little Italian Bistro. We loved the simplicity of it. Easy to make but it still impresses company. In the summer when I have too many zucchini I substitute it for the cucumber."

  • Chop cucumbers, tomato, and onion into large pieces.
  • Drizzle with olive oil and balsamic vinegar.
  • Add cracked black pepper and serve.

  2. I used two cucumbers instead of one, added 1/4 cup feta cheese, and used grape tomatoes instead of roma. Very easy and tasty! Filling, too!
     
  3. Absolutely awesome. I thinly slice all the ingredients using my mandalin. I always use roma tomatoes and have used white wine balsamic vinegar on occasion. I have also added sliced black olives once in awhile. Serve at room temp for the best flavor. I love this as a side to grilled steaks or salmon.
     
  4. Cucumbers don't like me so I used zuchinni and made this just as the recipe directs. What could be better than fresh, top quality vegetables and ingredients? I love summer.
     
  5. I've made this twice, first time didn't have Balsamic vinegar so used malt vinegar, it was okay but nothing to brag about. Second time used the balsamic vinegar, made a world of difference. I adjusted the serving portion to make 4 servings, got two quart containers, ate one on the spot and have another container in the fridge calling my name. Thank you very much for the recipe, I used to buy a quart of this at a local restaurant for $9.00, now I can make twice as much for less than $2.50 and it tastes better than the restaurants!! No pic but one shown is spot on
