ingredients
- 1 seedless English cucumber (or substitute zucchini)
- 3 medium tomatoes or 6 roma tomatoes
- 1⁄2 red onion
- olive oil
- balsamic vinegar
- cracked black pepper
directions
- Chop cucumbers, tomato, and onion into large pieces.
- Drizzle with olive oil and balsamic vinegar.
- Add cracked black pepper and serve.

Absolutely awesome. I thinly slice all the ingredients using my mandalin. I always use roma tomatoes and have used white wine balsamic vinegar on occasion. I have also added sliced black olives once in awhile. Serve at room temp for the best flavor. I love this as a side to grilled steaks or salmon.

I've made this twice, first time didn't have Balsamic vinegar so used malt vinegar, it was okay but nothing to brag about. Second time used the balsamic vinegar, made a world of difference. I adjusted the serving portion to make 4 servings, got two quart containers, ate one on the spot and have another container in the fridge calling my name. Thank you very much for the recipe, I used to buy a quart of this at a local restaurant for $9.00, now I can make twice as much for less than $2.50 and it tastes better than the restaurants!! No pic but one shown is spot on
