Tomato and Fresh Mozzarella Bruschetta

ingredients
- 1 large tomatoes, preferably vine ripened, seeded and chopped
- 1 small garlic clove, crushed
- 1 -2 teaspoon olive oil
- 1 ounce fresh mozzarella cheese, diced
- 1 tablespoon fresh Italian parsley, minced
- salt and pepper
- 1 loaf Italian bread, cut on the bias into 5/8 inch slices
directions
- Combine first 5 ingredients in a bowl. Add salt and pepper to taste.
- Toast bread lightly.
- Arrange toasted bread on a plate, and spoon a small amount of tomato mixture on top. Enjoy!
