- 4 large onions, sliced into 1/2 inch rings
- 1 1⁄2 cups all-purpose flour
- 1⁄4 cup cornmeal
- 1⁄4 cup onion powder
- 1 teaspoon sugar
- 2 teaspoons salt
- 1 1⁄2 - 2 cups milk
- 1 large egg
- lard (for frying)
directions
- Put the flour, cornmeal, onion powder, sugar, and salt in a large bowl. Add 1-1/2 cups milk, the egg, and 1/2 cup water. Whisk until slightly lumpy. It should have the consistency of pancake batter. If it's too thick, add 1/4 cup milk or more to thin it down.
- Put the oil in your deep fryer and preheat to 375 degrees (or in a deep pot and measure the oil temperature with a deep frying thermometer). Dip the onion rings in the batter. Fry 3 or 4 coated rings at a time, turning the rings when they float to the top. Continue turning the rings until they are golden brown, 3-5 minutes. Remove the rings from the oil and drain on paper towels. Serve.

I'm a single Dad of 3 kids. I've been a bachelor for 15 years. I took an interest in cooking at an early age. My Mom is a fantastic cook. Before I was ever allowed to cook a meal on her stove, she taught me the importance of spices. After high school, I split time as a ranch hand and cook for a renowned area restaurant. I have created many of my own recipes. And adapted others to my personal tastes. I have cooked for a lot of people over the years. And although I never entered a contest myself, many people who have not only entered but won big contests have tried my food. And I have often been asked why I don't enter. The answer is simple. My reward is the look of satisfaction on people's faces when they enjoy what they are eating. I don't need a trophy to enjoy the art of cooking. I just want to serve a good meal to good people who appreciate it.
