  • Heat oven to 375°.
  • Grease 18 regular-size muffin cups (or 12 large size muffins).
  • In bowl, mix butter until creamy. Add sugar and beat until pale and fluffy.
  • Add eggs one at a time, beating after each.
  • Beat in vanilla, baking powder, lemon zest, and salt.
  • With spoon, fold in half of flour then half of milk into batter; repeat.
  • Fold in blueberries.
  • Spoon into muffin cups and sprinkle topping onto each muffin.
  • Bake 15 to 20 minutes, until golden brown and springy to touch.

    I’m looking at the picture of these muffins and it looks like there’s rolled oats in it , but I don’t see it in the ingredient list , is this picture of a different muffin?

    Is it possible to double the recipe and still get the same results?

    These were difficult to remove from the wrappers the day they were made. Easier the next day. Flavor ok. Not what I was hoping for.

    I made these yesterday. Today they are all gone and I am being asked to make a fresh batch. Luckily they are easy and most ingredients are on hand. The only difference today is that I am out of blueberries so will be subbing bananas & chocolate chips. Who says they have to be healthy, right?
