"the Other White Meat" Chicken Salad Sandwich

ingredients
- 2 -3 cups pork chops, cooked & finely chopped (I cut boneless chops leftover from the night before's dinner into 1 inch chunks & pulse them in the )
- 1⁄2 - 3⁄4 4 green onions, sliced or 1 -2 shallot, diced
- 1⁄2 cup carrot (large shreds)
- 2 teaspoons lemon juice
- 3⁄4 - 1 cup mayonnaise
- 1 teaspoon celery seeds or 1/2 cup chopped fresh celery
- 3⁄4 cup dried cranberries
- 1⁄4 cup pecans, chopped
- 1 Asian pear, chopped (pear-apple)
- salt & pepper, to taste
directions
- Combine all ingredients in large bowl, stir til combined.
- Serve immediately or refrigerate for an hour or two to let flavors mingle.
- We especially like it on cracked wheat bread but sourdough or croissants would be delicious as well.

I saved 2 thick slices from the two ends of a pork roast just for this recipe & followed the recipe on down, although I did substitute lemon pepper for the S&P, & we had a wonderful salad for sandwiches! Great change of pace from our often-served chicken salad! And, since I usually have chopped &/or shredded pork in the freezer, just waiting for something like this, I'll be making it again! Hi! I am happily married with two children, 26 and 12. For nearly 10 years when this site was Recipezaar and then Food.com I hosted several different forums. I enjoyed making, creating, reviewing, and photographing recipes, but what I miss the most are the friendships I made here.
