- 1 tablespoon butter
- 1 tablespoon olive oil
- 6 pork loin chops with bone
- 1 can condensed cream of chicken soup, undiluted
- 1 can mushroom, drained and chopped
- 1⁄4 cup Dijon mustard
- 1⁄4 cup chicken broth
- 2 cloves garlic, minced
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon dried basil
- 1⁄4 teaspoon black pepper
- 6 potatoes, unpeeled,cut into thin slices
- 1 onion, sliced
- chopped parsley
directions
- Heat butter and oil in large skillet.
- Brown pork chops on both sides. Set aside.
- Combine soup, mushrooms, mustard, chicken broth, garlic, salt, basil and pepper in slow cooker.
- Add potatoes and onion, stirring to coat.
- Place pork chops on top of potato mixture.
- Cover and cook on Low 8 to 10 hours or on High 4 to 5 hours.
- Sprinkle with parsley.

I made this recipe as written - great recipe but next time I would change the pork chops to boneless. The chops were so tender that the bones fell off them and some of the little pieces fell into the gravy/sauce, where you would not see them. A friend, who came over for dinner, loved them but almost swallowed a small piece of bone that had fallen off. He caught it just in time before he swallowed it. If it had been one of my grand kids eating this, that bone fragment could have caused real damage. So - from now on I will only use boneless pork chops in the crock pot. Other than that - I would highly recommend this recipe.

I made this recipe just as written and it was incredible. The chops were so tender (not dry at all) and the gravy/sauce with the potatoes and onions were delicious. It's a complete dinner that comes together with little to no effort! Brown the chops beforehand as stated because it makes all the difference!
