I loved this dish and will be making it often. I will point out, however, that it took a lot longer for my carrots to get tender. Maybe your carrots are smaller than what I can get. The flavor combination is excellent, though. Next time, I think I'll cook the carrots til half done before making the rest of the recipe. Thanks for posting.

Delicious! Easy and beautiful, too. I loved the combination of ingredients and was surprised my kids did, too. Served this for Christmas dinner but it's so easy and good, I'd serve with roast chicken, ham, or pork as well as that Thanksgiving turkey. Be sure to use cooking apples like Granny Smith which will hold up to baking without turning to mush. Thanks for sharing the recipe!

I live in the Kansas City area and have many hobbies including cooking, reading and spending time with my husband and two children who are very active in sports now. I also have an eBay business which is a fun hobby that makes a little extra money! My interest in cooking focuses on making healthy dishes that are more satisfying than the higher fat and higher sugar versions. If I had a month off with no responsibilities, I would spend it at a luxury spa.
