Thai Lychee Soda

"A wonderfully refreshing and beautiful beverage that goes perfectly with an oriental meal, or just to enjoy itself on a hot summer day. I sometimes use the lychee fruit juice out of the can (1 cup) in place of the actual fruit."

directions

  • Puree the lychee fruit and water until a smooth consistency is reached.
  • Strain the mixture into a pitcher, and discard the pulp.
  • add lime juice and red syrup and stir well.
  • pour into glasses filled with ice cubes until 3/4 full.
  • top the rest off with club soda.
  • Garnish with mint and serve.

  1. Fresh tasting and refreshing! I used the syrup from a can of lychee fruit like you do sometimes because I love to just eat the fruit I didn't want to waste the pulp and they are quite expensive here. I used a Middle Eastern grenadine, bottled lime juice and perrier water for the club soda, I did not use the cold water. I will make this again with fresh lime juice insha Allah. Made for PAC Spring 2010.
