  • Cut chicken into bite size pieces.
  • In a large saucepan, simmer coconut milk and curry paste over medium heat for 5 minutes.
  • Add chicken, fish sauce, brown sugar, peas and chicken stock.
  • Simmer 10 minutes, stirring occasionally.
  • Note: start with a small amount of curry paste and increase gradually until desired spiced level.
