Taco Beef and Rice Pie

Taco Pie Crust
- 2 cups beef broth
- 1 cup rice
- 1 tablespoon butter
- 1 teaspoon salt
- 2 eggs, beaten

Taco Pie Filling
- 1 lb ground beef
- 1 garlic clove, crushed
- 1 teaspoon cumin
- 1⁄2 teaspoon salt
- 1⁄2 cup taco sauce
- 1 egg, beaten

Taco Pie Topping
- 1 avocado, mashed
- 1 tablespoon onion, chopped
- 1 tablespoon taco sauce
- 1⁄2 teaspoon salt
- 1⁄2 teaspoon lemon juice
directions
- Taco Pie Crust.
- In a sauce pan bring broth, butter and salt to a boil.
- Add rice, cover, turn to low and cook for 20 minutes.
- Cool rice slightly, add eggs mix well.
- Press mixture into a 9 inch greased pie plate, going up sides.
- Set aside.
- Taco Pie Filling.
- Brown ground beef, drain fat.
- Stir in garlic, cumin and salt, cook 2 minutes longer.
- Remove from heat, stir in taco sauce, egg.
- Spoon into prepared rice pie shell.
- Bake at 350 degrees for 25 minutes.
- Taco Pie Topping.
- While pie is cooking, mash avocado together with onion, taco sauce, salt and lemon juice.
- When beef pie has cooked the 25 minutes, spread avocado mixture over the top and cook another 5 minutes.
- Serve.
- *Optional items green chillis, grated cheese.

I live in a small rural town in central California. I am lucky enough to live and work in my community. I am the site coordinator for an after school program where we enroll over 100 students. My motto is there are no bad kids only bad parents. I have one daughter that is now in her second year of college and a husband that is the worse critic when it comes to food. He either likes it or doesn't no in between. I have been at the zaar for over a year now and continue to go back and forth on buying a membership, right now I'm going for buying. Trying to convince myself that it is only $2.00 a month and I could clean up that nonmember cookbook and get it organized so I might be able to find something :)I'm kinda a pack rat when it comes to food, I always have back ups and sometimes back ups for the back ups. My husband always tells everyone if there is a national disaster come to our house shirley will be able to feed an army.
