- 2 cups dried apricots
- 1 cup golden raisin
- 2 cups rice
- 1⁄2 cup butter
- 1 cup onion, minced
- 1⁄2 bell pepper, chopped
- 1⁄2 teaspoon curry powder
- 1 cup almonds, toasted
- salt and pepper
directions
- Cover apricots & raisins with water and soak for 30 minutes. Cook rice according to package instructions.
- Preheat oven to 375 degrees F. In a skillet, melt butter and saute onion, bell pepper and curry. Add almonds & the drained & chopped apricots, raisins and cooked rice. Correct seasonings as desired. Place mixture in a greased baking dish and bake for 30 minutes.

HUGE HIT! It makes a lot; I used a 9x13 pan to bake it. I think a bit more curry powder would be good; the flavor didn't come through well using the amount listed. A beautiful color, too. THE PICKY ONE who doesn't like nuts loved it, almonds & all. Hooray! Made for ZWT9 Family Picks, Mike & the Appliance Killers. **NO I DIDN'T, LOL.
